There are a couple of things to consider if you'd like to be a bar manager.
To manage a bar you generally will need to have your Manager's Certificate. In order to obtain this, you need to sit your License Controllers Qualification and show that you have an understanding of liquor licensing laws and your responsibility as a seller of alcohol. You can take the test on the ServiceIQ website and it's free!
To get your Managers Certificate you will need to apply with your local council. Auckland Council, for example, requires you to renew your Manager's Certificate annually and resit your LCQ annually as well. A requirement for obtaining your Manager's Certificate is that you have some experience in the hospitality industry, so make sure you work up some hours so you have a good understanding of how things work in a bar/cafe and how to deal with people if they get a bit carried away.
